Epitope expression profile of 121 spelt cultivars and landraces from different geographical provenances. Epitope expression levels were measured through the use of specific TaqMan probes targeting the canonical form of the four main α-gliadin epitopes involved in CD. The relative quantities were calculated by dividing 2ΔCt values by a normalization factor obtained through the expression analysis of stable reference genes
